The Mediterranean Diet is commonly known for the health benefits it provides and it is no surprise that more and more doctors, nutritionists and food experts recommend it. Due to the low calories meals and the virgin quality of the fat source used, the mediterranean diet is an excellent ally for facing a number of diseases and their risks.
In order to cook Mediterranean style you only need simple ingredients you can easily find in a supermarket, fresh fruits & vegetables and olive oil.
Veal with vegetables & mushrooms
for 8 servings
Ingredients
Directions
1. Cut the veal in 8 slices
2. Mix the ingredients for the marinade in a bowl and let the veal slices in it until you prepare the rest
Don't forget to turn the meat both sides
Tip: If you have planned to cook this meal you can leave the veal in the marinade all night in the refrigerator covered with a piece of folio, to cook the next day. It will give an excellent taste.
3. Using a cooking brush apply the olive oil in your baking pot, bottom and sides
4. After chopping all your vegetables in big cubes or rolls put them in the pot, except for the 4 tomatoes each cut in 2 pieces, and mix with your hands
5. Add the mushrooms and the tomatoes concasse
6. Add salt, pepper & spices and mix again
7. On the top of the vegetables mix put the marinated veal slices and decorate with the tomatoes
8. Cover the pot with its cover or folio and put in the oven
Preheated oven at 200oC
Cook time ≈ 1h 30 min

- 2 aubergines, chopped in cubes
- 2 zucchinis, chopped in cubes
- 4 potatoes, chopped in cubes

- 2-3 paprikas, red, orange, yellow, green - mix colors, chopped
- 250 gr mushrooms, any kind or mixed
- 400 gr tomatoes concasse (chopped tomatoes in tomato juice)
- 1 1/2 tablespoons olive oil
- salt, pepper, paprika pepper, oregano, rosemary, dill (better dried)

- 3 tablespoons mustard mild or hot
- salt, pepper, thyme

I always like learning about new foods. I'm so used to eating what's given to me and I should probably spend more time on what I eat. I do try my best to follow the Food Guide Pyramid though.
ReplyDeleteWell, that is very good and it also nice that you mentioned that you and probably most of us should spend more time on what we eat. You know what they say! We are what we eat. It is so true! One can see that while growing older, cause when we are young everything just seems so easy. It is great that you try to follow the pyramid, it is an excellent guide.
